Tomato Carolino Rice, Shrimp, Coriander, Ginger and Lemongrass

The flavours of fresh lemongrass and hot ginger are fused with garlic, tomatoes and coriander to create a fragrant dish that’s as delicious as it is healthy.

To Serve

  • Carolino Rice
    280 grams
  • Water
    1 litre
  • Shrimps, peeled
    300 grams
  • Tin of chopped tomatoes
  • Garlic, minced
    1 clove
  • Stick of lemongrass
  • Coriander, chopped
    1 bunch
  • White wine
    1 glass
  • Olive oil (to taste)
  • Salt (to taste)
  • Large saucepan



Pour a small cup of olive oil in a pan. Add onion and garlic and let it cook on low heat for 4 minutes or until onion is translucent.


Then add the ginger, lemongrass and tomatoes and cook for 3 more minutes. Cool off with white wine, increase the heat and add the rice


Wrap well and add the triple water for each cup of rice. Season with salt, reduce heat and simmer for about 6 minutes.


Add the prawns and coriander. Mix gently and cook another 6 to 8 minutes. Serve immediately.
