To Serve
Sift the rice flour and salt together in a bowl. Add the rice puree and a little water if required to make smooth, pliable dough.
Divide the dough into 10 equal balls. Roll out each ball into a 6" disc, which is 1/6" thick.
Heat the ghee on a flat pan; place one of the discs flat on it and fry for 3 minutes on each side ensuring that dark brown specks do not appear on the underside. Turn the disc over and pour some ghee from the side to shallow-fry. Remove and repeat until all of the discs are fried.
