Shallow Fried Rice Flour Bread (v)

Quick and easy to prepare, this bread is made with rice flour so is suitable for those with an allergy to gluten. This bread works perfectly served alongside your favourite curry or rice dish.

To Serve

  • Basmati rice, well cooked, ground with a little water to make a smooth paste
    300 grams
  • Rice flour
    230 grams
  • Ghee
    4 tbsp
  • Salt (to taste)
  • Fine sieve for sifting
  • Flat pan



Sift the rice flour and salt together in a bowl. Add the rice puree and a little water if required to make smooth, pliable dough.


Divide the dough into 10 equal balls. Roll out each ball into a 6" disc, which is 1/6" thick.


Heat the ghee on a flat pan; place one of the discs flat on it and fry for 3 minutes on each side ensuring that dark brown specks do not appear on the underside. Turn the disc over and pour some ghee from the side to shallow-fry. Remove and repeat until all of the discs are fried.
