Seafood & Chilli Rice Gumbo

Cook’s tip: Try using a pack of prepared seafood mix or use Tilda’s Sweet Chilli and Lime variety.

To Serve

  • Pack Tilda Mexican Chilli & Bean rice
    250 g
  • Can chopped tomatoes
    400 g
  • Smoked paprika
    ½ tsp
  • Clove garlic, chopped
    1
  • Green pepper, diced
    1
  • Cod fillet, cubed
    300 g
  • Cooked peeled tiger prawns
    150 g
  • Cooked mussels
    75 g
  • chopped parsley
    2 tbsp
  • Large frying pan

Method

Place the tomatoes, paprika, garlic and pepper in a large frying pan and bring to the boil, add the fish and seafood.

Simmer for 5-7 minutes until slightly thickened.

Stir in the rice and cook for 2 minutes, stirring occasionally.

Stir in the parsley and then serve.
