Rice pudding breakfast bowl

Pudding for breakfast? Uhuh - we're sooooo there. A light fruity breakfast bowl that can be prepared the night before to enjoy the following morning.

To Serve

  • Basmati rice
    100 g
  • Rice milk
    130 ml
  • Natural Greek yogurt
    1 tablespoon
  • Chia seeds
    1 teaspoon
  • Pumpkin seeds
    1 tablespoon
  • Ground cinnamon
  • Vanilla extract
    1 teaspoon
  • Blueberries
    100 g
  • Honey or preferred syrup (to taste)
    1-2 tablespoons
  • A saucepan
  • Large bowl



Cook the rice in excess water for 10 minutes. Drain, rinse with cold water and drain again.


Place rice in a bowl and add the rice milk, yoghurt, chia seeds, pumpkin seeds, cinnamon and vanilla.


Mix well to combine and leave in a fridge overnight if time allows.


To serve top with the blueberries, honey (or syrup) and additional yogurt if desired
