To Serve

  • Easy cook long grain rice
    150 g
  • Tinned chopped tomatoes
    ½ cup
  • Onion, chopped
    ½
  • Clove of Garlic, chopped
    1
  • Oil (sunflower or vegetable)
    1 tbsp
  • Stock (chicken or vegetable – can be made using stock cubes)
    1 ½ cups
  • Large saucepan with lid
  • Saucepans with covers

Method

Add the oil to a medium heat pan and add garlic & onions stirring for 2 minutes.

Stir in the tinned chopped tomatoes & stock and bring to the boil.

Add Easy Cook Long Grain rice, cover and let simmer for 15 minutes.

Remove from the heat and let it stand for 5 minutes covered.

Then fluff with a fork & serve (Often with Jerk Chicken).
