Nigerian Fried Rice

This Nigerian twist on a classic fried rice recipe is filled with sweet yellow, red and green peppers but is lent a balancing seafood twist with the addition of prawns.

  • Easy cook long grain rice
    210 grams
  • Water
    350 ml
  • Chicken broth
    120 ml
  • Red pepper, sliced

  • Green pepper, sliced

  • Yellow pepper, sliced

  • Carrot, diced

  • Onion, chopped
    0.5
  • Green peas
    75 grams
  • Cooked prawns or shrimps
    325
  • Large saucepan

Method

Place the water and chicken stock into a saucepan and bring to the boil. Add the rice and cook for 15 minutes. Once cooked, drain and set aside.

Add the oil to a hot pan and then add the prawns/shrimps and vegetables. Cook for a few minutes then add the cooked rice. Stir-fry the rice and vegetables for another few minutes.

Serve immediately.
