Healthy Chicken Fried Rice

This dish tastes so good that you will forget it is healthy, it is perfect for a mid-week nice and easy dinner.

To Serve

  • Chicken breasts

  • Dark soya sauce
    100 ml
  • Lime Juice
    20 ml
  • Water chestnuts
    1/2
  • Spring onions
    3
  • Red onion, finely chopped

  • Garlic Clove

  • Red chilli pepper
    1/4
  • Rice
    1.5 cups
  • Mushrooms, finely chopped

  • Sweet pepper

  • Large frying pan

Method

Cook the chicken breasts in the oven at 180oc until fully cooked (white all the way through).

Boil the rice.

Cut the pepper in half and roast in the oven.

Meanwhile fry the onion, garlic and mushrooms, add the lime juice and soya sauce, add the shredded chicken, rice and spring onions. Stir and serve with rocket, chopped chilli and roasted sweet pepper.
