Everyday Coronation Chicken and Rice Salad

This healthy salad is perfect when you need a delicious meal that’s ready in less than 20 minutes. The flavour of the sultanas and toasted almond flakes complement the chicken perfectly and the addition of dried apricots provides a sweet, delicate flavour.

To Serve

  • Everyday rice
    200 grams
  • Low fat mayonaise
    150 grams
  • Turmeric
    1 pinch
  • Semi-skimmed milk
    100 ml
  • Mild curry powder
    1.5 tbsp
  • Dried apricots, chopped
    100 grams
  • Sultanas
    50 grams
  • Toasted almond flakes (optional)
    50 grams
  • Cooked chicken, cut into chunks
    300 grams
  • Large saucepan

Method

Cook the rice and turmeric in a pan of boiling water for 12 minutes. Once cooked, drain and allow to cool.

Meanwhile, mix together the mayonnaise, milk and curry powder and stir in the dried fruit, almonds and chicken.

Stir into the cooled cooked rice and season to taste. Serve with leafy salad.
