  • 3 Grain rice
    320 grams
  • Water
    1 litres
  • Tuna in Oil
    100 grams
  • Italian mixed peppers in oil
    1 small jar
  • Tomatoes, skinned, desseded & chopped

  • Stoned black and green olives
    60 grams
  • Spring onions, chopped
    30 grams
  • Extra virgin olive oil
    100 ml
  • Lemon juice
    1 tbsp
  • Balsamic vinegar
    1 tbsp
  • Salt & Pepper (to taste)

  • Fresh basil leaves (to garnish)
    1
  • Large saucepan
  • Large serving bowl

Method

Cook the rice for 20-22 minutes in boiling, salted water. Once cooked, drain and run under cold water.

In a large serving bowl, mix in the tuna, tomatoes, peppers and spring onions. Combine the lemon juice, balsamic vinegar and oil in a bowl, and stir thoroughly. Combine with the 3 Grains mixture and stir well. Garnish with torn basil leaves and serve chilled.
